Born and raised in Stockholm, Sweden, executive chef Björn
Holm knew by the age of 15 that his life’s calling was
to become a culinary artist. Confident and skilled at an early
age, he opened his own restaurant at 21. The small eatery
thrived for five years before the travel bug hit.
His formal training began at Burgården Culinary School
in Göteborg, Sweden and he quickly moved on to work with
chefs from all over the world, including France, Spain, South
Africa, Italy & Australia.
Quo Vadis in Soho, London, owned by Marco Pierre White, who was voted “Top
European Chef” of the last decade, invited Björn
and his talents to join their team. The Aquarium Restaurant
at Tower Bridge on the River Thames followed, as did a stint
in the south of England at the elegant Chewton Glen Resort,
voted by American Express to be one of the Top 15 hotels in
the entire world.
In 2001, to help a friend and fellow chef, Björn hopped
on a flight for New York City for what was meant to be a mere
three month stint at one of the only Scandinavian restaurants in
New York City. As fate would have it, he met and married C.J
Kitsos.
Having grown up in Chicago in a family of restaurateurs,
C.J moved to New York City in 1988. A 20 year veteran of the
music industry and armed with a degree in management from Columbia College in Chicago, she toured with and promoted artists such as KISS, Bruce Springsteen, Bon Jovi, Dave Matthews Band, John
Mellencamp, The Scorpions, Def Leppard and Shakira. Looking for a career change, she attended The Institute of Culinary Education, studying Pastry and Baking. Afterward, she was offered a full-time position at L'Atelier de Joël Robuchon at the Four Seasons in Manhattan, but after a short stint at the 3-Star restaurant, realized her passion was running her own company. “My family
has always been in the food and restaurant business. It was
always around me growing up. Running a catering company is
so exciting and was such an easy transition for me. And it
perfectly utilizes the best of Björn’s and my skills!”
